If you beat all eight gyms in Kanto, go to Pallet Town and visit Professor Oak. He will be very impressed with you, and give you access to Mt. Silver, which you can initially access through the building at the end of Victory Road (or West of Viridian City). Red is training in Mt. Silver, so when you meet him, be prepared for a tough battle. He has a level 81 Pikachu, and the rest of his Pokemon are rather strong as well.
After that, the last thing you can do is complete your PokeDex. You don't really get anything except the diploma in Celadon City.
