Blue ones
This depends on the pokemon's nature, not the species.
you go to slateport and get the pokeblock case first which is what i didnt know to do and then go in the pokemon competition thingy then there is a girl in the bottom left corner. Go to her and she says something like here have one ive got two and that is the pokeblock case. Then go to the safari park and then i dont actually know where to find heracross but i guess youd go somewhere in the grass at the start
Pokeblock's are not in diamond instead there called poffin's, just like ruby, sapphire and emerald in the Pokemon contests you can create your own poffin using berries.
The type of Pokeblock that a hardy nature Pokemon likes is one made with berries. These can be found throughout the game.

give them the kind of pokeblock they like

This is a hard question to answer. The best Pokeblock would depend solely on what nature your Ralts has. The nature is what decides what pokeblocks the Pokemon would like and not the actual Pokemon type or species.
Liteblue pokeblock..
Yes, the water stone from Pokemon looks like Sapphire.
NO, unfortunately Pokemon blue, red and yellow are all first generation Pokemon games and Pokemon sapphire is third generation. You can trade Pokemon from blue to games like gold and silver, but not games like firered and sapphire.
i am almost certain that you cant trade as when Pokemon sapphire was made, Pokemon like bulbasaur werent invented. Sorry
That will depend on its nature not what kind of pokemon it is. Test out each color until the dialogue says that the pikachu liked it.
