Well, you have to wait for it to grow up into a horse, which is when it gets a saddle on its back. Usually it takes a year or so; you have to make sure it has a lot of affection for you.
Anyway, once it has the saddle just press A in front of it like you would usually do to talk to it. Then you will be on its back. Press A to get off.
Sad thing is that you can only ride the horse in your farm, besides the horse races, which you can enter on your horse.
