Go to minecraft's home page (the link is under "Sources and related links" below this answer), and once logged in, go to profile. Go to this link to a template and save it as a picture.
Then go into a picture editing studio (I used paint but it wasn't too good, although good for just colour) and paste the picture. The body is split up into a net like a shape so you need to know what the original guy looks like to locate his body parts. Edit it and then save the template as a png file with a different name.
Now go back to the profile tab on the Minecraft site and browse the photo. It won't look like its done it but when you go onto minecraft you will see that you look different!

The beta version of Minecraft was released on December 20, 2010.* * Minecraft-beta came after Minecraft-alpha, but before Minecraft 1.0. You can play Minecraft-beta with the new launcher.
The regular download as of Minecraft 1.8 is the Beta Minecraft. The last Minecraft update I believe will be the "Final" product and official game and no longer be a game in Beta.
Not unless you have a minecraft client in beta.
Minecraft is currently scheduled to leave beta November 18th of 2011
