No, you cannot. The Restore is a last-ditch-effort feature when something is wrong on your iPod, so losing all of your songs is going to happen. You should be able to easily drag the songs from your iTunes library back onto the iPod if you put it in the library (if you didn't, do it next time so you won't have to buy all of your songs again!)
