You are able to find emeralds in the extreme hills biome (tall mountains and hills). They are very rare though. They are dropped as an item and not an ore. They are pretty easy to find in abandoned mineshafts as long as the mineshaft is in an extreme hill biome. Emeralds are not in veins making them harder to find. They can usually only be found as a single emerald ore. They can be obtained in the ore using a silk touch pickaxe. Emeralds can also be obtained by villagers in NPC villages. You can also trade emeralds to villagers for different items.
