Fight in the Defense style first of all through the combat menu. Fight creatures that have high hitpoints or regenerative qualities like monks or Experiments or Dragons. With monks especially they can hardly ever hit if you have more than lvl 10 defense and they regenerate very rapidly with their spells, so I've heard of people training their accounts to 45 defense when they step off tutorial island just by purely attacking monks while in the defense style.
