The Demo mode is locked on survival unless you change it with the cheat for gamemode. Also it has a time limit of 1 hour and 30 minutes and after the time limit you can't interact with the world that is set with one seed.

The full version allows you to have any game mode, even hardcore mode, you can have multiple worlds, have different type of worlds, find NPC villages, abandoned mineshafts, strongholds, can go to the Nether, can go to The End, and can fly.
