Actually yes there is, i have one card that does so. One that's called "LEVEL LIMIT AREA B" it changes the position of all monsters on the field whos stars are equal to four or more, to defence position if they are not already. There is also one called "BLOCK ATTACK" once this spell card is activated the controller of the card selects one monster on the field and changes it to defence position.

Stopping your opponent with 'Mirror Force' 'Sakuretsu Armor' and ' Magic Cylinder would be a great defensive strategy. This is arguably the best ultimate defence in Yu-Gi-Oh.
