Sounds like Ordeal of a Traveler. The effect is applied when the opponent attacks (does not have to be against a defence mode monster, or even a monster at all). He must select a card from your hand and correctly guess if it is a monster, spell or trap, or his attacking monster is returned to hand.
Only if it has an effect that lets it attack more than once per turn, like Asura Priest does.
Yes, this is what you normally do since you can't place them in face down attack position.

if a monster attacks a symboll in capsule monster coliseum the monster gets 50 XP so if you want to lvl a monster up to lvl 2 just destroy a symbol twice!
