As per the basic rulebook, you need two tributes for monsters of Lv7+. Some high level monsters have rules text to say they require three tributes, but these are exceptions. In the case of monsters like Yubel (Lv10) they still only require two tributes.

Not a lot, really. Normally a Lv5+ monster will need one or two tributes, depending on actual level, and this is called a Tribute Summon, which is still just a regular Normal Summon. However some cards let you ignore that, like Blackwing - Sirocco the Dawn can under some circumstances be Normal Summoned without tribute. Basically a Normal Summon is a Normal Summon, whether it required tribute or not.


If you use 'Soul Exchange' and take your opponents monster can you tribute that monster and your monster for a level 7 or higher or can you only summon a 1 tribute monster?

Clearing up some possible confusion - Soul Exchange doesn't 'take' monsters, nor does it do anything to them on resolution, except for set up a condition that says you can tribute it as if it was one of your own. You tribute it therefore in exactly the same way as if it were on your side of the field. There is nothing stopping you tributing it, and a monster on your side of the field, to summon a Lv7 or higher monster. In fact if you used 2 Soul Exchanges, you could summon a Lv7+ monster with both of them.
