There is more than one answer to this question, depending on your definitions of 'Sims' and 'games'.
If you're referring to The Sims, then there have been 3 games released so far. These are The Sims, The Sims 2, and The Sims Online, with The Sims Stories planned for 2007 and The Sims 3 planned for 2009. The Sims Online can only be played with other people over the internet, so some people may not consider it to be a game in the series in the traditional sense. However, these games have been released in various formats, and more importantly have had a number of expansion packs on sale for them.
The original The Sims game had a total of 7 expansion packs released for it. These are Livin' Large, House Party, Hot Date, Vacation, Unleashed, Superstar, and Makin' Magic.
The Sims 2 has so far had 5 expansion packs released for it, with a sixth in the pipeline. These are University, Nightlife, Open for Business, Pets, Seasons, and then Bon Voyage with a planned September 2007 release date. Similarly, The Sims 2 has also had 5 'stuff packs' released, with a sixth planned. These are Holiday Party Pack, Family Fun Stuff, Glamour Life Stuff, Happy Holiday Stuff, Celebration!
