You can't. They can only be found in chests in dungeons (those rooms with mob spawners).

If you have the Mo' Creatures mod, then it's leather across the top, two iron ingots in the bottom corners, and one ingot in the middle.

If you have the Animal Bikes mod, you have to put 9 pieces of leather in a crafting table take the new leather, and make a helmet out of the new leather.

you have to right click the work bench and on the top three squares you put leather and on the middle block to the left and the middle block to the right you put leather too,then you take iron and you put that on the middle middle one and on the bottom left and right

In minecraft, there is no way to build a sattle (unless you have a mod), the only way to obtain the item, is by finding it in a Dungeon. But Watch Out For Spiders And Other Mobs!
