Flying on Minecraft Creative mode is one of the most useful things about creative. You double tap the spacebar to go up and use shift to go down. You still use AWSD to steer. Hope this helps!

You could get toomanyitems mod if you want it in survival or now in 1.8 you can go in creative mode.
Build the map on Creative Mode then go to seedscope.net and upload your level.dat for the map on the Change Survival to Creative option. You should then download the new level.dat. Replace it with the old level.dat and when you start Minecraft, you should see that it is now a survival map.

If you keep digging down, eventually you will reach the bedrock layer, this is indestructable. If you're in creative mode though, you can destroy bedrock and go further down. However the only thing below it is 'the void' which will kill even a creative mode player.
