When you get the egg, it'll hatch into an Eevee and just use a ThunderStone if you want another Jolteon. any Pokemon including totodile,chikorita,and cyndaquil can be breeded with a ditto except ledgendary Pokemon however rarities can be breeded just itll be a tough time getting a rare Pokemon from the egg like red gyrados + ditto = black magikarp(if youre lucky!)

Why wont your Ditto have an egg with jolteon?
Ditto can breed with EVERY type of Pokemon except legendarys. Personally I JUST got an egg from the two of them.
