More likely you're thinking of Uncle Joe, the show's foil. He was played by character actor Edgar Buchanan, who was also William Boyd's sidekick on Hopalong Cassidy. He died in 1979.

The theme song was altered to ( It is run by Joe, come and be his Guest!) following the death of Bea Bernadette who was known as Kate on the show. The name of the Hostelry was the Shady Rest.
The dog in Petticoat Junction didn't have a name. He was simply referred to as "dog". The dog's name in real life was Higgins, who would later portray "Benji" in the movie of the same name. It should be noted that beginning with Season 5, Episode 21 "Higgins Come Home", the dog was often referred to as "Dog" so it can be argued that the dog's name on the show was "Dog". In Season 5, Episode 14 "Kate's Day In Court", Kate (Bea Benaderet) states "he doesn't have one" when asked the dog's name. It could be argued that eventually the dog's name WAS in fact "Dog"...it could also be argued that the dog had no name.
