There are a few reasons. The main one is that people wanted specific slaves.

So they might want a strong male or a kitchen slave. not just a bunch of different ones.

Also, if there was a really good slave then people would pay for that one specifically. That slave ould make more profit for its owner than a few alright slaves that might be part of a family.
