With the current OS i don't think it is possible to edit photos in the photos app on your ipod touch or iphone. However there are apps on the app store which you can download that should you should be able to edit your photos on.
I think he uses VSCO Cam or PicFx.
Picasa is an app you can download for free. It is 'easy to use' and you can use it to organize, edit, and share your photos. If you like to share your photos it would be helpful.
