I would use either a modified,or improved cylinder, choke for close in small bird hunting.
Either a full choke,or extra full choke shotgun barrel.
You're asking a lot. You want to hunt one of the biggest and smallest birds with the same shotgun. So, you'll have to size it for the largest, right? I love my Remington 11-87 Special purpose in 12 ga. 3" mag. I shoot #2 lead 3" mags for turkey with a extra full turkey choke. Aim for the head and neck. If I was to go dove hunting I'd use #7 1/2 or #8 field loads in 2 3/4" and modified choke. You may have to change chokes depending on the range you 'd be shooting the doves. You're asking a lot. It will depend on what you are hunting and which brand of shell your shotgun patterns best.
For the Stoeger side-by-side shotgun, your best bet would be to use any of the standard Winchester choke tubes. They should fit well for you shotgun.
A shotgun is the only legal firearm for duck hunting in the US.
The one that the man is carrying!
A full choke is the best for waterfowl. It will keep your pattern tight as long as possible due to the distance involved with shooting ducks and geese in flight.
