Double clicking the application's icon will launch an application. If the application is shown in the Dock then only a single click on its icon is required.
Change the icon in the application's resource file, then recompile.
When you remove an icon from the desktop on a Mac, you do not put the application in the trash only the desktop icon.

Click on the icon at the top of the info box, and Paste the new icon in. Very easy to do.
