If your apps close on launch (that is, you tap on the app icon and you're immediately taken back to the home screen), try the following steps:
Either download and read the users manual from 'support.apple.com/manuals or take the iPod Touch into an Apple Store and ask the people there
Click on the IPod symbol, when you plug it in, on itunes. Up top go to "Apps" and select "Sync Apps" off to not sync them :)
If your iPhone has iOS7 all you have to do is click the home button twice quickly, then all the apps you have open will appear as windows and you can swipe left and right to move from one to the next. To close them, just swipe the app window up!

The app that you are trying to open may not be compatible with your version of iPod Touch software.For example, if you have the iPod Touch 3.0 software, a lot of apps will not work with it because the apps are not compatible with that specific software.Some apps state in their summary that it isn't compatible with certain iPod Touch software versions.

You do it from your IPhone app for the watch. Open that on your phone and you can change faces, add apps, remove apps, download updates.
It is not bad in itself to have a lot of apps on your iPhone. Some negatives may be if many apps are open at the same time it may slow down your phone and having many apps may take up a lot of space.
