Definitely call your girlfriend or wife etc. gorgeous, but it's probably not a good idea for someone you have a crush on. It's "too strong" of a word, and it might scare her off. Calling her "very pretty" is cute, and so is "beautiful", but only once you're pretty sure that she likes you like that too.
