To remove the bolt on a Remington 581, push the safety lever forward (towards muzzle). This will put pressure on a plunger located down in the trigger assembly. Attached to this plunger is a pin that protrudes up and keeps the bolt in the receiver. Pushing the safety forwards depresses the plunger which pulls the pin down, and allows the bolt to be slid free of the receiver.
Yes they are interchangeable. The 580 is a single shot bolt action and the 581 is a clip fed bolt action.

the safety switch, just behind the breach, next to the bolt, doubles as the bolt-release. with the gun unloaded, pull the bolt back and push the safety switch forward past the "fire" position. the bolt should then be released so that you can easily pull it out of the back of the gun.
The Remington model 700 bolt handle is part of the bolt body and this is a one piece forging.The only way to remove the bolt handle is to cut it off at the bolt body.

Actuate the bolt to the rear and there is a tang in front of the trigger that hangs down..Press up on this tang and pull the bolt back and it will remove it from the action.
You first need to remove the fore arm and then the barrel needs to be removed from the receiver. The bolt will then come out the front of the receiver.
There is a button at the beginning of the breach that you pusy in and the bolt will pull straight back out of the breach.
Open the bolt all the way, then push the safety forward and slide the bold out.
After the bolt carrier is removed, the pin is driven straight down to remove.
