If you drink six beers on a Saturday night, it is highly unlikely that it would show up in your system on Wednesday morning. Alcohol usually leaves your system within 8 to 12 hours depending on how your body metabolizes it.

Not unless you specifically choose gluten-free beers. They are brewed from other stocks, such as sorghum or rice and contain minimal or zero gluten. Regular beers will make you react if you have Celiac disease.
If you want a hangover, I suggest going for it! Your blood alcohol content would soar from binging and you'd of course feel miserable tomorrow morning. I WOULD HIGHLY SUGGEST THAT YOU DO NOT DO THIS.
That is the equivalent of 4 normal beers. It would take over 4 hours for your body to metabolize that amount of alcohol. And you would most likely be legally drunk for the first two hours. If it is a high alcohol content it will take longer.
