on iTunes, if you click on the song and click info, on one of the tabs, there will be two boxes, one containing 00:00, and the other will contain how long the song is. these two boxes tell the iPod at which point to start and stop the song. say there was a 10 second gap at the start and finish of a song you wanted to skip, simply change the first box to 00:10, so it skips the first 10 seconds of the song, and take 10 seconds off the second box to tell it to skip the last 10 seconds of the song. then simply plug your ipod in and press sync

In iTunes just unckeck the song and then sync your ipod. The song won't sync to your ipod touch unless you tell it to sync your entire library. It's that simple. Hope this helped :)
