In ep S08E09, 34min14sec in, he left Leon one at the hospital that looks like a "Zero Tolerance ZT0302 Folding S30V w/ TDLC Coating, Coyote Brown Handle, Plain Edge". Anyway, I saw other ones in previous episodes.
Gibbs carries a Gerber Fred Carter, which is no longer in production. He has also been seen using a Kershaw 1660 (aka Leek) and a Zero Tolerance 0302
