The Sphincter is a valve at the opening and the exiting ends of the stomach. The sphincter helps keep food that has been swallowed, where it should be, in the stomach. It also helps to digest the food at a slow rate, to keep the body fuller for longer.

Well, the body has multiple sphincters, but they all serve the same purpose. Essentially, a sphincter is a ring of muscles. They regulate the fluids and materials that pass through the body. The sphincter located at the opening of the stomach, for instance, prevents stomach acids from going up the esophagus. Gastroesophageal Reflux Disease (Acid Reflux) occurs because this sphincter is abnormally relaxed and isn't preventing stomach acids from entering the esophagus. People have another sphincter at the anus which regulates feces disposal. People have a lot of sphincters, actually. There's even one located at the iris of the eye! However, it seems that the most commonly known one is the anus. That's probably because, though many people have little grasp of anatomy, virtually everyone knows what the anus is. That's what makes this world beautiful.

They are variable controls which can open to allow the passage of material and then closed to prevent further passage of materials. If you didn't have an anal sphincter you'd really have problems.
