Sorry, Answering my own question (just found out)
minecraft was stuck on "updating" because it couldn't find the Minecraft.jar file, usually it would attempt to fix this by re-installing (or "Retrieving") it, but because it could find the bin file it couldn't understand why Minecraft.jar file wasn't there:
Explanation: (any thing in brackets is not part of a file name)

Last login (which was an unknown file for me)

"bin" (file inside .minecraft) contains:

Minecraft.jar (the folder it couldn't find)
Iwjgl_util.jar
jinput.jar

Natives (file)
I had royally screwed up my minecraft.jar file, and deleted it because a website said it would re-install itself,
YOU HAVE TO DELETE THE WHOLE "Bin" FILE TO GET IT TO RELOAD

When i log onto minecraft 1.7.3 it says updating. then it says updating complete or done updating. after that it just stays like that. Anyone know why or how i can prevent this from happening?
Try clicking options in the log in menu and do "Force Update". If that doesnt work, try going into your files, search "%appdata% and delete your .minecraft folder. Then go to minecraft again and it should re-install all the updates.
