Sorry, Answering my own question (just found out)
minecraft was stuck on "updating" because it couldn't find the Minecraft.jar file, usually it would attempt to fix this by re-installing (or "Retrieving") it, but because it could find the bin file it couldn't understand why Minecraft.jar file wasn't there:

I had royally screwed up my minecraft.jar file, and deleted it because a website said it would re-install itself,
YOU HAVE TO DELETE THE WHOLE "Bin" FILE TO GET IT TO RELOAD

Try clicking options in the log in menu and do "Force Update". If that doesnt work, try going into your files, search "%appdata% and delete your .minecraft folder. Then go to minecraft again and it should re-install all the updates.

OMG the aether is a mod its not in vanilla minecraft and the people who made the aether mod sopped updating it a long time ago.
No, of course not. Force updating only makes the game redownload the game files in the /bin/ folder. Your game saves aren't in that folder.
Updating minecraft on the computer is very easy. When you open the launcher and log in, it should download the new version automatically (if you confirm it). Obviously, this requires an internet connection. The only difference is updating to 1.6.1. This version requires you to visit the minecraft website, go to the downloads section, and download the new launcher. Then, when you want to play minecraft, you open the new launcher, login, download the update automatically, and play.

No. Minecraft cannot be shut down. But if you mean if it will stop updating, that will not be any time soon
You should try opening it and then updating it, that makes it not only update but also repairs Minecraft.
