Sheik is the male alternate form of the Princess of Hyrule, Zelda.
Sheik appears in the Ocarina of Time Nintendo 64 game and Super Smash Bros. Brawl, in which you can play as Zelda and turn into Sheik.
During Ocarina of Time, Zelda reveals herself as Sheik, but only after all of the temple dungeons that are avaible as adult Link have been completed and you return to the Temple of Time.
Sheik is of the race called the Sheikah, almost extinct within Hyrule, and one of the oldest protecting races of the Princess Zelda.
There is one other Sheikah member noted in the Legend of Zelda series, Impa. She appears in several other games, including the Ocarina of Time, the Oracle games, and Skyward Sword. She is the one who mentions in the Ocarina of Time that the Sheikah race was sworn to protect the Princess.
Sheik additionally appears in several Fanfictions, fanarts, and possibly manga, but the majority of these are non-canon and cannot be trusted.

As Sheik was introduced in Ocarina of Time, which was after the animated series, s/he is not in the animated series. Nor is the Zelda from the animated series the one who becomes Sheik.

Yep she sure does. Once you complete all dungeon temples in Ocarina of Time, go back to the Temple of Time and Sheik should be there. Then there will be a cutscene with Sheik using magic to quickly change from Sheik to Zelda.
