The Old Sea Chart is a key item given out only through events (however it can be hacked into the game) and is only available to Emerald version.
Natures (not JUST in Pokemon Diamond) give your Pokemon one stat boost, as well as one stat hinderance. For example, Adamant increases attack and reduces special attack. Some natures don't have ANY effect. If you need a chart for natures, I have one made here:

Other than cheating and GTS, you must get the Old Sea Chart on Pokemon Emerald Version from a Nintendo Event and then trade it to whatever game you're playing.
