This makes sense, since there was another Trainer who rivaled Ash in Hoenn and had a Meowth with the same story: it lost to a Persian once and then hated all Persians since then.

well yes because ash's Pikachu was the first pokemon that ash got and he formed a very close bond with that pokemon, hence as to why its always with him in the TV series and the pokemon movies

When the series first started pikachu didn't like Ash that much because he just got it and he was an inexperienced trainer and to top it all off he immediately hugged pikachu which he didn't like so he shocked him.

Maybe he was still a Pikachu because Pichu didn't not exist when the anime was made. The videogames "Gold and Silver" were not made until in 1999.
