The Johnny Cash & Willie Nelson 1998 VH1 Storytellers version is spine tingling. Another awesome one is a hard rocking version by Lightning. You can find both on YouTube, though the Lightning version is listed under Rider in the sky. Two different ends of the spectrum, both great takes on the song.

Among instrumental versions, Chet Atkins is outstanding.

For something off the beaten path, try the Vietnamese street band version by Dan Bau Vietnam.

There are over 1000 versions of GRITS, so stating that any one is the best is difficult. I have collected over 700 versions and am constantly searching for more.

Tastes vary, but personally, I find the Johnny Cash versions to be rather ordinary and boring, and the Storytellers version is not helped by Willie not remembering the lyrics.
