It is currently impossible to change a villager's profession in minecraft without an external mod, or program.
Because the current version of Minecraft on the Xbox 360 is not as up-to-date as the PC, the trading feature with an NPC villager does not exist. When Minecraft updates to that specific version, NPC villagers will be able to be traded with.

Villagers are already 'tame' they are passive. You right click to trade with them.
No, you cant have a baby villager of your own, but you can get baby villagers in less than 10 seconds. All you have to do is find or spawn a villager, right click the villager as many times as you want, hit the villager, and you can have baby villagers (FYI, BABY VILLAGERS ARE VERY ANNOYING!)
