"IP" means internet Protocol. An IP address is either a string of number that identify your computer online, or a domain address - example: name.domain.com - through the use of IP "hiding" services. For minecraft, IP addresses make it possible for players to connect to servers provided the host has their server client running in order for it to appear online.

You can't join a server without knowing the IP or domain, which you should be able to get from the server's host. You don't need to know a server IP or domain if you're playing via LAN (Local Area Network) with people on the same router/network, as this is a sort of 'offline' mode. If you're looking to host a server of your own, you'll need to ensure your router is port forwarded or supports the port required - often 25565 - and you will need the server client.
