For exampel I hade a Feraligatr that was over level 30 (Feraligatr evelves from Croconaw at that level). First I didn't want it to evolve, but later, when it was on a lot higher level and I wanted it to become Feraligatr, I just made it grow another level and it evolved. A pokemon that still can evolve and is above the level it evolves on will try to evolve everytime it grows a level if you push B when it evolves (by doing this your pokemon doesn't evolve).
