Think of it this way. Patrician of Darkness changes the target of an attack when it is declared. Grand Mole's effect only activates later, at the beginning of the Damage Step.
So while Grand Mole is always still going to be able to activate its effect, it may not be against the monster it really wanted to do, Patrician of Darkness' player can change the attack target before this point.

I don't know how old the question is, but the answer is basically you can't.you can return it and remove it though, but not destroy it... except by battle but it can avoid the attack with its other effect... your best bet is to use cards like dimensional prison, compulsory evacuation device, penguin soldier, neo-spacian grand mole, dark core, something along those lines...
No you cannot. When a monster says it 'cannot be special summoned except by..' it means that's the only way it can ever reach the field. Five-Headed Dragon can't be special summoned, except by Fusion Summoning it. Even if you fusion summon it and it is destroyed, it can't be brought back to the field by cards like Call of the Haunted, or Red-Eyes Darkness Metal Dragon.
You can manually change the battle position of a monster once per turn, (but not on the turn it was set or summoned from hand) If you flip a monster face down with Book of Moon or use the effect of Sonic Bird, then you are allowed to flip summon them in the same turn.
