There is no definite answer, but I think One Punch man is because as we know one punch man has no limit to his power. Sure Goku can transform to Mastered Ultra Instinct which will finally bring some challenge to Saitama, but at the same time Saitama can still do a very serious punch, even though we can't imagine how would it look like, I think even Mastered Ultra Instinct won't be able to stand against someone who has no limit to his power.
