Any Equip card that doesn't specifically say otherwise, can be equipped to your opponent's monsters. Even if that would be disadvantageous to you, it still can be done. It also means if a monster is equipped with Axe of Despair, it still remains equipped with it even if control of the monster changed.

Because Metalmorph changes the ATK of a monster, it can be activated in the Damage Step. You can therefore do two things. If the defending monster is face-up already, you can activate Metalmorph in response to the attack, that's fine. If the defending monster is face-down, you will flip it at the start of the Damage Step, and can activate Metalmorph as above, before you enter Damage Calculation.

'Ring of Magnetism' specifically says that it can only be equipped to a monster on your side of the field. If a player takes control of a monster equipped with 'Ring of Magnetism', then the Equip Spell card will be destroyed because it is equipping an illegal target.
Cards like Megamorph, Limiter Removal, Metalmorph, and more can be equipped to Monster to boost their ATK above Shining Dragon. Smashing Ground, Fissure, Crush Card Virus, and other cards that do not target a Monster can be used to destroy it as well.
