It depends which difficulty setting you've got it on. If you're playing on peaceful, you're more or less free to mine and build in relative safely, there are no hostile mobs, your hunger doesn't decrease. You can still die from falling, drowning, lava, etc.
Playing on Easy or Normal will mean there are hostile mobs, but you can't starve to death (though there are still negative effects from hunger).
On Hard, enemies do more damage, and you can starve to death.
To fly in survival mode you need to craft the eye of ender
