Go into the app itself under applications and you will see uninstall or unintall updates. If you can not find it in your phone go into your app store and type in the name of the app you are looking for, there might be many so look untill you see the words installed next to the app and click on it in order to take you to the app and just click uninstall update. There's no way to undo it, as the update overwrites the old firmware. There's no real reason to remove an update as the updates add new features and increase performance, as well as allowing access to the eStore.
