You need to buy an item called a "Certificate of Ownership", which is made by characters with the Inscription trade skill. Then you can change the name. That is the only way, other than taming and leveling a new pet of the same type but giving it a different name.
Note that after you rename a pet with the Certificate, you cannot do it again for a while.
