Firstly block any entrances off so that no new water can enter. Then fill the interior with a block like sand or netherrack perhaps, something that is abundant and can be removed quickly. The idea is that when all the interior space is gone, you've removed all the 'source blocks' that water flows from. You then have to remove all the stuff you just placed, but the water is now gone from the room.
