Go to Oreborough City (The mining place) and there should be an Ace Trainer in the Pokemon centre. If you talk to her, she'll give you options on what your Sprite can be, but it only shows up in the union rooms and things like that, and not in the actual game. (There's AR codes to change your sprite ingame, though.)
