That depends on the kingfish you're looking for. The vaugue answer would be to do specific things and cast your fishing pole (the better out of the rod and pole) in the different bodies of water.
However, specifically you want to follow this:
1. Catfish: go through the winter mine, all the way to the last level (ten levels total), and go through the door way. Fish there until you get it.
2. Squid: During the summer, go to the beach, through a small fish in as bait, and fish. Bait lasts one day.
3. Sea Brim: Every season other than winter; sell 200 fish (any size), and try your hand at fishing in the ocean.
4. Angler: In the winter between 10pm and 8am fish in the ocean.
5. Carp: After all other kingfish are caught, go up the mountain to fish in the lake.
6. Char: You musst complete the four fish related recipes before trying to catch him in the waterfall river or the river by your house.
