Possibly, but doubtful. Most headsets use a 3.5mm jack, one each for stereo headphones and the mic. The 360 controllers use a much smaller jack, and only has 1 for both, plus 8 pins, 4 on either side of the connector, for who knows what. The older headsets use these pins but don't require them (the Rockband drum controllers do NOT have spots for these pins, and come with adapters for the older style headsets), while the newer headsets are just the 2.5mm connectors. You may be able to do this with a USB headset, plugging it into the console, but I doubt it will work without the Xbox Live stuff on the inside (or the devices used to tell the console that the controller is player1 through 4).

As far as I know, you cannot plug in any PS2 controllers into a PC/Mac. But, Logitech offers a wide variety of gamepads. Which are basically controllers that you can plug into your PC/Mac and use to play any game. Plus, the gamepads have a very similar design and feel to the PS2 controller. As long as the controller plug will fit into the plug-in on your game system, then yes.
There are no controller "slots" on the PS3. All of the controllers are wireless and are automatically mapped to which "slot" it is in depending on order of controller activation. To plug the controllers into a "slot" you could plug them into the USB ports, but this is not necessary unless you are charging your controller.
