Yes, there is a way to play versus offline, but only for the Xbox 360. To start a local match, press the X button and this will open the 'Play a Game with Friends' menu. Press X here to open a small 'Create Game' menu. All the game types will be listed here, select 'Versus Mode' this will bring you a screen where you can create and play your offline Versus match, but you will still have a limit of two people on one Xbox 360.
