It depends on the model, but in most cases the Xbox 360 headsets were designed for use with the Xbox 360. I found only a single mid range price model that is currently available and advertised and would work with multiple platforms. That was a model called the Ear Force PX21 that claims "The Ear Force PX21 integrates premium stereo game sound with crystal-clear communication on the PlayStation Network (PSN), XBOX LIVE® and PC/Mac to create the definitive audio environment for playing popular game titles on all platforms." (See related link) You can also see from looking at the other headsets link for Xbox 360 that most current models will not work. When you look at the PX21 information in the related link they say it was designed for the PS3 so it is really a case of a PS3 headset that can work on a Xbox 360 which might be why the model number starts PX21. None of the models that start with the X like X41 or X31 will work with the PS3
