Face-down monsters are indeed monsters for the purposes of cards which count monsters on the field or affect all monsters.
However, if a card effect specifies a monster with a specific type, attribute, ATK, etc., it will ignore face-down monsters because those values are unknown in game terms.

There are no Lv3 XYZ monsters because XYZ monsters have a Rank and not a Level, and to all intents they are considered level-less. The Rank 3 XYZ monsters are; - Constellar Hades, - Chronomaly Crystal Chrononaut, - Black Ray Lancer, - Brotherhood of the Fire Fist - Lion Emperor, - Grenosaurus, - Giant Soldier of Steel.

No, a 'Flip Summon' is a manual change from face-down defence to face-up attack position in one of your main phases. If the monster is flipped from an attack, or by an effect, then this is a Flip, but not a Flip Summon. Therefore regular Flip Effect monsters like Night Assailant will trigger from being attacked, but monsters that require Flip Summoning like Guardian Sphinx will not.
