We do not see each pirate give his blood but its assumed since all the coins are shown already in the chest except for the one Elizabeth has. The last coin and last person's blood they needed belonged to Bootstrap Bill who they had tied to a to a cannon ball and thrown overboard before realizing they would need him to break the curse. They don't know at that point that Bootstrap is now a member of Davy Jones crew, since Davy rescued him his death. So they need the next person's blood in Bill's bloodline which is Will.
