I can't speak for all movies, but last year a major motion picture was filmed in my home town, and the majority of the cast and crew stayed in a local hotel. The film's star was Matt Damon, and there were rumors circulating throughout town that a house in a pretty upscale neighborhood had been rented for him and his family, but I never saw any confirmation of that. I would have to say, mostly, that the cast and crew probably stay in local hotels.

Pedro Armendariz killed himself after being diagnosed with terminal cancer. At least 91 of the 220 member's of the cast and crew contracted cancer. "The Conqueror" was filmed near nuclear testing grounds. After filming on location, 60 tons of radioactive soil was shipped back to Hollywood to be used in interior shots.
